Elote, or Mexican street corn, is street food at its best. Think corn on the cob, but better because its slathered with Mexican Cotija cheese and spices. So easy, yet so delicious.
Usually I say Happy Sunday to everyone, but the continued killings of unarmed Black men and women here in the States isn’t something to be happy about. My heart literally aches.
I thought about not posting a new recipe this week, but I made a personal commitment to myself. One that I refuse to let the crazy people of this world take in addition to the life they’ve already robbed us of this week. So I’m posting a recipe, because this is my way of coping with what’s happening. But today isn’t really about this Elote recipe. The goal of today’s post is to remind everyone who comes here today or some time in the future of a simple truth that doesn’t need to be adjusted for culture correctness, explained, or otherwise censored:
BLACK LIVES MATTER.
To those who need to hear it. Be angry. Be sad. Please be everything you need to be in this moment. Then get active. Because this won’t stop unless and until we decide to do something about it. Every single one of us has something we can contribute.
Lastly, to those who don’t know me outside of this blog, please don’t ask me if I am ok, I’m not. No one should be ok with knowing that many of the same people who are supposed to be protecting us, are killing us. If you want to ask me how you can help, please don’t. Thank you for your concern, but instead of asking me, take 5 minutes to search the internet, watch the news, or read a book. I’m tired.

Elote (Mexican Street Corn)
Ingredients
- 4 ears fresh corn
- 2 tbsp 0% Greek yogurt (or Mexican crema)
- 2 oz Cotija cheese
- 1 tsp paprika
- 1 tsp cayenne pepper
- fresh cilantro, for garnish
- lime, for garnish
Instructions
- Grill corn for 6-10 minutes, or until corn is tender and slightly charred.
- Immediately remove corn from grill and smear on Greek yogurt. Sprinkle on paprika and cayenne. Top with crumbled Cotija cheese. Garnish with chopped cilantro and fresh lime juice. Serve immediately.
