I haven’t posted a new recipe in a little while because life has been so busy. There is so much going on, but I have to remind myself that everything that is happening is really positive. I just have to remain grateful and continue to set aside time for the people and things that matter to me.

So with all that being said, I knew I had to devote some more time to the blog. I’m keeping things super simple this week with a twist on a childhood staple. How many of you have tried canned corned beef? As a child, I grew up eating canned corned beef a lot. It was pretty common in Jamaica because it was cheap and filling, and my mom and aunt always found ways to make it taste delicious.

As I’ve grown older, I’ve tried to move away from processed foods and red meat, so canned corned beef kinda had to go. And to be honest, I am not sad about it because I HATE having to use those silly little metal keys to open the can. I still have a scar on my thumb from a failed canned corned beef can opening attempt -__-

The recipe…

Today’s recipe is my take on a corned beef fried rice.The first step to this recipe is cooking the rice. You can totally use left over rice for this. In fact, left over rice is best because it has less moisture, meaning it will get nice and crispy. Prepare the rice following the instructions on the packaging. I used short grain brown rice and I prepared it in my Instant Pot, which greatly cuts down on the cooking time.

Next, it’s time to prepare the vegan ground beef. You can use any brand of ground beef you like! I seasoned the “beef” with garlic powder, salt and pepper and fried it up with some oil, onions, mushrooms and brussels sprouts. Make sure to allow the beef to fry up for a few minutes before you crumble it up with a wooden spatula, that way you get maximum crispiness!

Once the rice is cooked, add it to the pan with the browned ground beef. Stir in the soy sauce, sesame oil, and sriracha. Continue frying for a few minutes, until the rice turns crispy. Top with chopped cilantro and serve. Simple, crispy, and delicious!

Substitutions

While this recipe is made using vegan beef, you can of course substitute with regular beef. You can also try using different veggies, like bell peppers, broccoli, or asparagus, depending on what is in season.

This vegan corned beef rice is a twist on a Caribbean staple. Features brown rice, vegan corned beef, and a mix of veggies.

Ingredients

  • 16oz package vegan ground beef
  • 4 tbsp canola oil
  • 1 tbsp garlic powder
  • 8 oz baby bella mushrooms, chopped
  • 8 oz brussels sprouts, trimmed and chopped
  • 1 medium sweet onion, diced
  • 4 cups cooked brown rice
  • 1 tbsp sesame oil
  • 1/4 cup soy sauce
  • 2 tbsp sriracha
  • salt and pepper
  • chopped cilantro

Instructions 

  • Heat 1 tbsp canola oil in a large cast iron or frying pan over medium heat. Add vegan ground beef and let it fry for 2-3 minutes undisturbed before using a wooden spoon to crumble the beef. Add garlic powder, salt and pepper and continue to fry until crispy, about 6-8 minutes. Remove from pot and set aside.
  • Add another 1-2 tbsp of oil to the pan. Add mushrooms, brussels sprouts and onion and cook until the onions become translucent and the mushrooms and brussels begin to get crispy, about 5 minutes.
  • In a small bowl, whisk together the sesame oil, soy sauce and sriracha. Add the ground beef back to the pot, then add cooked rice, remaining canola oil and the mixture you just created. Use a wooden spatula to stir everything together, then press the rice down onto the bottom of the pot. This will help the rice get maximum contact with the hot cast iron and will help it to get crispy. Continue cooking for 1-2 minutes this way, then use the spatula to mix the rice in the pot, making sure the rice and beef are fully coated in the sauce and the crispy pieces of rice are evenly disbursed. Top with chopped cilantro and enjoy!
