Can you believe it’s been a whole YEAR since Sweet & Sorrel launched?! To celebrate, I’m sharing the recipe for one of my ALL TIME favorite meals: Banana Fritters! Think of them as banana pancakes on steroids, these bad babies require only 2 ingredients and take less than 5 minutes to make.
These fritters require only 2 ingredients: flour and bananas. Say what?! For this recipe, I used a blend of oat and multigrain flour, but regular AP flour works great as well. The trick to getting the fritters to the right consistency is to use super ripe bananas. Make sure to mash the bananas until they form a paste and your fritters will turn out great every time. Also, do not to turn your stove up too high, that will help prevent the fritters from browning too quickly.
You all do not understand how much I love banana fritters. They are probably my all time favorite breakfast meal. When other kids were getting pancakes on the weekend, my mom was making banana fritters. They are the perfect mixture of sweet and savory and can be summed up in just one word: delicious!

Ingredients
- 1 extra ripe banana
- 1/2 cup flour of your choice
- 1 tbsp canola oil
Makes 4-6 fritters
Directions
- Peel banana and place in a medium bowl. Mash with fork until banana forms a sticky paste.
- Add flour and mix until thoroughly combined. Mixture should be thick but not overly clumpy.
- Heat oil in large skillet over medium-low heat. Using a spoon or ice cream scoop, measure out each fritter into the skillet. Cook for 1-2 minutes per side, flipping when edges turn golden brown.
