This week’s post is mainly about all the updates that I’ve been making to Sweet & Sorrel, but it’s also about this healthy Banana Walnut Bread, which is amazing and deserves a day named in it’s honor… seriously! Read on for the recipe!

But first, you all may have noticed the new site appearance. I recently moved to a self-hosted site, which in blog speak means I got an upgrade! Yay! The new site has a lot of cool features that allow for easier navigation and better visibility across the internet. Everything should be working well now, but if you notice something is off, please send me a message or post in the comment box below. I also just launched a Twitter page! You can get there using the link on the right. It’s still in the works and I’d love your insights on the best way to automate Instagram posts to Twitter and vice versa, especially so I can link recipes to the site easily on both platforms.

Be on the look out for some additional improvements in the coming weeks, including a recipe plugin for the site that will allow you to see serving sizes for each recipe, edit the recipes to fit your needs, and share S&S recipes! Exciting stuff, I really can’t wait to share it with you all.

Ok, now back to this banana bread recipe. Everyone has a recipe for banana bread, but this one is special. I searched and searched for a banana bread recipe that is good for me and delicious. After I wasn’t able to find one recipe that did the trick, I took the best parts of a number of recipes I liked and added some of my Caribbean flare.

Banana Bread | Sweet & Sorrel

The result is a recipe that cuts the sugar, oil, and fat way way way down, and substitutes plain AP flour for a mix of whole wheat and oat flour. The flour adds a nutty flavor that I really like. And you don’t notice how “healthy” this banana bread is because it is so good!

Banana Bread | Sweet & Sorrel

Ingredients

  • 2 large extra ripe bananas, mashed
  • 1 cup whole wheat flour
  • 1/4 cup oat flour
  • 2 large eggs
  • 1/4 cup coconut milk
  • 1/4 cup coconut oil (can substitute with 1/3 cup apple sauce)
  • 1/3 cup honey or agave
  • 1 tsp baking soda
  • 1 tbsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/3 cup chopped walnuts (optional)
  • 1/4 tsp salt

Directions

  1. Preheat oven to 325 degrees.
  2. Combine the wet ingredients in a mixing bowl (oil, whisked eggs, honey, mashed bananas, milk, and vanilla extract). Then add the baking soda, salt, and ground cinnamon and whisk to combine.
  3. Slowly sift in the flour, starting with the whole wheat flour. Do this slowly and in batches! It’s best to do this by hand, instead of using a stand mixer. Then add the oat flour. The mixture should be thick, but all the flour should be coated with the wet ingredients. Slowly fold in the chopped walnuts, reserving a handful to sprinkle on top.
  4. Pour the batter into a greased loaf pan and sprinkle the remaining walnuts on top.
  5. Bake the loaf for 1 hour. The bread will be done when a toothpick entered into the center comes out clean. Remove the bread and allow it to cool for 10-15 minutes before removing from the loaf pan. Allow the bread to cool completely before serving. Enjoy!
