I cannot tell you all how excited I am for summer. After missing out on all the fun last year due to COVID, my fully vaccinated self is ready to be outdoors again! And I am so ready for a summertime BBQ. It’s one of the things I really miss because I always look forward to hanging out with friends and reconnecting over good food and great weather. I can already smell all the delicious grilled meats and veggies.

So what better way to celebrate the summer than with these Lemon Salmon Skewers?

The marinade and herb oil…

These lemon salmon skewers are so dreamy! I mean they are just perfect for the summer. And the marinade! Oh, the marinade! It’s a delicious blend of sweet and tangy. To make the marinade, I used a mix of Watkins spices, and by a mix, I mean I basically emptied my spice cabinet lol. But it was so worth it! Watkins has a long history of making high quality products with all natural ingredients, so I was really excited to use these organic spices because I knew they would add amazing flavor and be good for me.

To finish off the dish, I made a simple herb oil.

Normally I use fresh herbs to make my herb oil, but this time I tried using Watkins Organic Oregano Leaves, Organic Thyme and Organic Cilantro this time. These herbs have a lemony flavor that works well with the fresh lemons in these skewers. And guess what, it was a huge success?! The Watkins herbs are so flavorful that I didn’t need fresh herbs at all! So perfect for when you only want to use your herbs for one small thing and don’t want to end up wasting a ton of fresh herbs (am I the only one?!).

Here are the details on this recipe:

  • Add Watkins Organic Garlic Powder, Organic Ground Cumin, Organic Smoked Paprika, Organic Fine Himalayan Pink Salt, Organic Ground Black Pepper, honey, lemon juice, olive oil and teriyaki sauce in a mason jar and shake vigorously to combine. That’s the marinade!
  • Cut the salmon into 3 inch chunks. Coat with the marinade and let the mixture sit for at least 3 hours, but preferably overnight.
  • When you’re ready to grill, soak the skewers in water to prevent them from burning. Alternate fresh lemon slices and salmon until your skewers are 2/3rds full. Leave some space on the skewer so you can pick them up to eat!
  • Grill for 4-6 minutes per side, or until salmon turns pink and is cooked through.
  • Make the herb oil by whisking together Watkins Organic Oregano Leaves, Organic Thyme, Organic Cilantro, Organic Fine Himalayan Pink Salt, Organic Ground Black Pepper, lemon juice and olive oil.
  • Top with the herb oil and enjoy!

These Lemon Salmon Skewers feature a sweet and tangy marinade and a simple herb oil.

Ingredients

Marinade

  • 3 tbsp olive oil
  • 1/4 cup teriyaki sauce
  • 2 tbsp honey
  • 2 tbsp fresh lemon juice
  • 1 tbsp Watkins Organic Garlic Powder
  • 1 tbsp Watkins Organic Smoked Paprika
  • 2 tsp Watkins Organic Ground Cumin
  • Coarse salt, to taste (I used Watkins Organic Fine Himalayan Pink Salt)
  • Ground pepper, to taste (I used Watkins Organic Ground Black Pepper)
  • 2 lbs skin on salmon, cut into bite sized pieces
  • 6 large lemons, thinly sliced

Herb Oil

  • 1/4 cup olive oil
  • 1 tbsp Watkins Organic Oregano Leaves
  • 3 tbsp Watkins Organic Cilantro Leaves
  • 2 tsp Watkins Organic Thyme Leaves
  • 1 tsp lemon juice
  • Coarse salt, to taste (I used Watkins Organic Fine Himalayan Pink Salt)
  • Ground pepper, to taste (I used Watkins Organic Ground Black Pepper)

Instructions 

  • In a bowl, combine ingredients for the marinade. You can also combine everything in a mason jar and shake to combine. Coat salmon in marinade and refrigerate for at least 3 hours, or preferably overnight.
  • Make the herb oil. In a mason jar, combine ingredients for the herb oil and shake vigorously until combined. Set aside.
  • Heat grill to medium high. Soak skewers in water, then thread chicken and lemon onto skewers. Grill skewers until salmon is fully cooked through and slightly charred.
  • Spoon herb oil over the cooked skewers and enjoy!
