Today’s post is pretty short, mostly because I need you all to go make this Seafoam Green Smoothie as soon as possible! This is NOT your typical green smoothie, it’s packed with a ton of unique ingredients that will help boost your energy all week. In addition to the green spirulina (hence the “Seafoam”), this smoothie has a little Caribbean twist because it uses frozen plantains and fresh coconut!

This week has been pretty hectic. Work has been picking up and I also traveled to attend a friend’s wedding. The wedding was absolutely beautiful and gave me a chance to reconnect with friends that I have not seen in a while. But now that I am back, I have so much work to catch up on! Since I was traveling, I was not able to meal prep this week, meaning all my meals will be based on what I have in my pantry and freezer. That also means that for breakfast this week, I will be eating a TON of smoothies like the green smoothie I am featuring today.

Smoothies are so easy to make, the only things you need are frozen fruits and some milk, coconut water, or fresh juice. Though I am not the greatest at keeping my pantry stocked, I almost always have frozen fruits and vegetables in my freezer just so I can whip up a quick smoothie in an emergency.

This smoothie recipe calls for more ingredients than my typical smoothies, but it’s totally worth it. Sometimes you just have to splurge on your smoothies. There are a few special ingredients in this smoothie that I want to highlight. First, the frozen plantains. Before you run away in horror at the thought of putting plantain in a smoothie, just hear me out. The plantains I’m talking about here are actually known as saba bananas and they’re the cute little chubby bananas that you may have seen in the grocery store. Saba bananas are actually a hybrid of a plantain and a banana and when they are ripe, they are super sweet and delicious. They make this smoothie sweeter and creamier than a traditional bananas would.

The other ingredient I want to highlight is green spirulina, which is a kind of algae. To be honest, I am not the biggest fan of green spirulina, it smells horrible! But its undeniable that green spirulina has many health benefits and a small amount goes a long way. When mixed with the saba bananas, coconut milk, and fresh coconut chunks, the taste of the green spirulina is almost unnoticeable (though pro tip – if you find that the green spirulina taste is still too pronounced, add some honey or agave!).

Some of these ingredients are a bit exotic and can be hard to track down, but they are worth it. Green spirulina is easy to get online and you can find the saba bananas and fresh coconut chunks at specialty produce stores. Trust me, this smoothie is totally worth the extra effort to hunt down these ingredients. To be honest, this “green” smoothie ends up tasting more like a desert than something that’s healthy for you. But there’s nothing wrong with that!

Ingredients

* makes 1 tall smoothie

  • 1 cup low fat coconut milk
  • 1 saba banana, peeled and frozen
  • 1/4 cup fresh coconut flesh, cut into chunks and frozen
  • 1 cup fresh spinach
  • 1/4 tsp green spirulina (trust me, less is more!)
  • 1 tsp chia seed (optional)
  • 1 tsp honey or agave (optional)

Directions

  1. Combine all ingredients together in a high powered blender and blend until smooth. Enjoy!
