If you all haven’t noticed already, I love pineapples. I especially love to eat them during the summer time, when pineapples are in season. I already have a savory pineapple recipe on the blog, namely this Pineapple Fried Rice, so of course I had to add a sweet pineapple recipe, and this pineapple galette is the perfect fit.

What is a galette?

A galette is basically a round tart with some kind of filling baked inside. Because the galette is shaped by folding the dough over the fruit, you don’t need a baking tin.

A galette is perfect for “non-bakers” because it is so easy to make. Fruit galettes are especially easy and tend to be healthier than other kinds of deserts. Since I enjoy cooking more than baking, but still love to eat something sweet everyone now and then, simple deserts like this pineapple galette are my favorite! Read on to learn how to make this simple, but delicious, pineapple galette.

The recipe…

The ingredients for this galette are so simple.

The ingredients for the dough are simply flour, butter, sugar, and a little water. You don’t need a stand mixer, and in fact, using a stand mixer is discouraged! Making this pineapple galette dough with your hands will ensure the dough is flaky. Another secret to flaky dough is cold butter! Cut the butter into small pieces and use your hands to break up the butter into the dough. Then add ice water, a little at a time, and work the dough gently until it forms a ball.

Once the dough comes together, Roll until its approximately the size of a 12×12 in circle. Place the dough on a baking sheet lined with parchment paper and pop it into the fridge to chill while you prepare the filling.

For the filling, I use fresh pineapples that I cut into roughly 1 in chunks. Add pineapples, sugar, maple syrup, nutmeg, cinnamon, ground all spice, cornstarch, and salt to a saute pan and bring to a boil. The sugar will melt and form a thick, bubbly sauce. Reduce the heat to a simmer and cook the pineapples for about 10 minutes. Let the mixture cool in the fridge for about 30 minutes to an hour.

Assembling the galette is simple. Remove the dough from the fridge and let it thaw for a minute. Scoop the spiced pineapple filling into the center of the dough. Next, begin to fold the edges of the galette toward the center. Don’t worry about creating perfect pleats. The more rustic the galette looks, the better it tastes in my opinion! Brush the crust with egg wash, then sprinkle some more sugar over the top.

Bake the galette for 45-55 minutes. Serve warm with a scoop of vanilla ice cream.

Substitutions…

Now let’s talk substitutions.

Pineapples: I used fresh pineapples for this recipe, but canned pineapples work too! I’d suggest only cooking the canned pineapples for about 5 minutes, otherwise they may get too soft and start to dissolve. You can also try baking the canned pineapples without cooking them down beforehand.

Spices/ Maple Syrup: You can totally make this recipe without adding the spices, but I think they give an extra boost of flavor and combat some of the sweetness of the pineapples. Instead of maple syrup, you can use honey, agave, or molasses.

Sugar: You can adjust the amount of sugar depending on how sweet your pineapples are. If you are using very ripe pineapples, reduce the sugar to 2 tbsp. If you are using canned pineapples that were in syrup, you may not need any sugar at all.

Ingredients

Galette Dough

  • 1 cup All-purpose flour
  • 1/3 cup unsalted butter, cold
  • 1 tbsp caster sugar
  • 1/4 cup ice water
  • 1/8 tsp salt

Spiced Pineapple Filling

  • 2 cups fresh pineapples, cubed*
  • 1/4 cup + 1 tbsp caster sugar
  • 1 tbsp maple syrup
  • 1/4 tsp corn starch
  • 1/4 tsp ground all spice
  • 1/8 tsp nutmeg
  • 1/4 tsp cinnamon
  • 1 tsp vanilla extract
  • salt
  • 1 egg, beaten

Instructions 

  • In a mixing bowl, whisk together flour, sugar, and salt. Cut cold butter into small pieces and add to flour mixture. Using your hands, press the butter into the flour mixture. The dough should begin to form clumps ranging from small pebbles to the size of a dime. Next, add ice water, a little at a time, and begin pressing the dough until it comes together.
  • Use your hands to knead the dough into a ball. Lightly dust your working surface with flour, then use a rolling pin to roll the dough until it forms a circle that's approximately 12x12 inches. Put dough on a baking sheet lined with parchment and place in fridge to cool, about 1 hour.
  • Make the pineapple filling by adding pineapples, sugar, maple syrup, nutmeg, cinnamon, ground all spice, cornstarch, and salt to a saute pan. Bring to a boil, then reduce to a simmer and cook for 10 minutes, until pineapples soften. Move to fridge to chill and allow sauce to thicken, about 30 min to 1 hour.
  • Preheat oven to 375 degrees F.
  • Assemble the galette. Scoop chilled pineapple filling into center of the galette dough. Gently fold the outer edges of the dough inward, forming pleats. Brush the dough with egg wash, then sprinkle 1 tbsp sugar on top.
  • Bake the galette for 45-55 minutes, until crust is golden brown. Serve warm with a scoop of ice cream.

Notes

*You can substitute canned pineapples for this recipe, just cook on stovetop with spices for 5 minutes instead of 10.

    I made this galette last night and it was amazing! The pineapple smelled so good cooking with the spices and my house smelled so good when it was baking. We devoured it. My kids asked me when I was going to make it again. I love all things pineapple so this will definitely go on my list of desserts to make often.
