Healthy Weeknight Dinner…

Happy Sunday! By now it’s no secret that I’m a pescatarian. Because I don’t eat meat, fish is my main source of protein. Salmon is a staple for me, because it is high in protein and Omega-3s. But I have to admit, sometimes I get bored eating salmon all the time! Enter this Trini Grilled Salmon. This salmon is not boring at all! It has delicious flavor, and it takes less than 10 minutes to prepare on a grill.

And ya’ll, this rice!!! By now, I consider myself a rice connoisseur. I’ve had pretty every kind of rice imaginable, but there’s just something about cilantro lime rice that keeps me coming back. It’s a really easy way to step up the flavor of your rice, and the flavors go with everything. The citrus in the rice is also a perfect combination for this salmon, yum!

Trini grilled salmon…

For for salmon, I used this Real Trini Curry sauce from Bazodee. It made prepping the salmon so easy. All I had to do was add some dry seasonings, toss on the curry sauce, and let the salmon marinate for a few minutes to absorb all the flavor. Then just grill and you’re done.

If you don’t have this sauce, you can make you own by adding some curry to my Green Seasoning recipe. The ingredients are very easy and it takes only a few minutes to pulse everything together.

If you don’t have a grill, you can simply pan sear the salmon, or broil it in the oven for a few minutes.

Cilantro lime rice…

Making the cilantro lime rice is as easy as cooking your rice as you normally would, then stirring in some chopped cilantro, lime juice, and lime zest. Then finish with some salt and pepper. I told you this dish is simple!

You’ll be making cilantro lime rice with everything now. It’s that good.

A match made in heaven…

Trini salmon with Spanish rice kind of sounds wonky, but together, this dish is a match made in heaven. The salmon has a slight kick from the curry, but also has a great balance with all the herbs. That means it pairs really well with the rice, which has lots of citrus and herbs. It’s a great dinner option and is ready is less than 30 minutes!

Ingredients

Trini Grilled Salmon

  • 4 salmon fillets
  • 1 tbsp paprika
  • 2 tsp garlic powder
  • 2 tbsp Real Trini Curry Sauce (SEE NOTES for substitution)
  • 2 tbsp neutral cooking oil
  • salt and pepper

Cilantro Lime Rice

  • 4 cups cooked white rice (short grain works well)
  • 2 tbsp fresh cilantro, finely chopped
  • juice and zest of 1 lime
  • salt and pepper

Instructions 

  • Preheat grill or oven.
  • Place cleaned salmon into a large bowl. Add dry seasonings and curry sauce. Rub the seasonings into the salmon to make sure each fillet is evenly coated. Let the salmon marinate while you prepare the rice.
  • To prepare the cilantro lime rice. Mix rice, chopped cilantro, lemon juice and lemon zest Add salt and pepper to taste. It is best to add the seasoning when the rice is warm (not hot), so it can absorb the flavor. Fluff with a fork and set aside.
  • Grease grill or baking tin with oil. Cook salmon for 3-4 minutes per side, depending on the thickness. Salmon is done when the center is no longer translucent.
  • Enjoy!

Notes

SUBSTITUTION: Instead of the Real Trini Curry sauce, you can make your own Green Seasoning by following this recipe, and add 2-3 tbsp of hot (or mild) curry powder.
