This is the last weekend of August, and that means summer is coming to an end…or it’s supposed to! But the weather here in D.C. is HOT. I mean the kind of hot that makes me not want to turn my stove or oven on at all! Which means it’s the perfect time for popsicles!

I mentioned in one of my earlier posts that my mom and I love to make fresh juices, especially fresh carrot juice. It is a labor intensive process but SOOO worth it. Fresh carrot juice tastes so good!

My mom would convince me to help her make the juice by telling me that it would help my eyesight, which was destroyed after years of reading books. Nerdy, I know! I bought my mom’s story and was her willing assistant.

Drinking all that carrot juice didn’t have the result I thought it would (I still wear glasses and contacts), but I still love making fresh carrot juice. All you need are carrots, water, and a strainer.

How simple is that?!

So let’s talk about what goes into these carrot popsicles. First, there’s fresh carrot juice. Then, to give these pops a dose of color and flavor, I added coconut yogurt and coconut milk. The addition of the full-fat coconut yogurt and milk gives these pops a nice color, but also makes them taste more like a smoothie or dessert than just straight frozen juice.

And, the additional color creates a really pretty swirl detail on the pops. Just look at that swirl!

There really isn’t much to say about these carrot popsicles, other than go try them now!

You literally have no excuses.

Excuse #1: I don’t have a Popsicle mold.

If you don’t have a Popsicle maker, you can use paper cups and just tear the cups away once it’s frozen.

Excuse #2: I don’t have the time to make fresh carrot juice.

Making your own carrot juice does take time, but there are a number of 100% carrot juice brands available (my favorite is this one from Bolthouse Farms), or you can use another type of juice.

Excuse #3: I’m vegan, I can’t eat these!

Umm, these Popsicles are vegan too honey (or agave 🙂 ). See what I did there?!

As I said, NO excuses.

Can I substitute the carrots?

Of course! Here are few other summer time alternatives:

Watermelon

Mango

Pineapple

Use freshly made juice, or store bought and substitute for the carrot juice. Keep the remainder of the recipe the same.

Just one word of advice  – maybe don’t try to photograph these pops when it’s 94 degrees outside! They melt so fast 🙁

Ingredients

  • 3 lbs carrots, cleaned and chopped (or store bought carrot juice)
  • 8 cups water
  • 3/4 cup dairy-free coconut yogurt
  • 1 cup full fat coconut milk
  • 2 tbsp agave (or honey)

Instructions 

  • To make the carrot juice. Add blend chopped carrots and water to a high powered blender. Blend on high until carrots are completely macerated. Strain using a fine mesh strainer. Discard the pulp. Transfer carrot juice to a pitcher and refrigerate until chilled. If using store bought carrot juice, skip to the next step.
  • In a large bowl, combine the coconut yogurt, coconut milk, and agave (or honey). Set aside.
  • Fill Popsicle molds 3/4 of the way with carrot juice. Place molds in the refrigerator for 25-30 minutes, or until juice is firm, but not frozen. If the mixture is too cold, let it sit on your countertop for a few minutes. Using a spoon, drizzle the coconut mixture into the molds until the molds are full. The mixture should naturally create a swirl pattern. Place back in the freezer and freeze the molds for a least 6 hours. Remove and enjoy!
